Raw vegan cacao and coconut bliss balls

These are perfect when you are craving chocolate and just need that sweet fix. The recipe below is by the amazing Daniella of FODMAPS Foodie  – her flaxseed crackers are another one of my favourites.

I just swapped the chocolate protein powder for brown rice protein powder, switched 1 tbsp of shredded coconut for ground flaxseed and added organic rice puffs to bulk out the mixture (better for my stomach and my student budget!) Feel free to swap and change the mixture around too, keep testing as you go!

Makes approx. 10 balls:

  • 3 tablespoons chocolate protein powder
  • 2 tablespoons ground almonds
  • 4 tablespoons shredded coconut & extra for rolling
  • 2 tablespoon raw cocoa powder
  • ½ teaspoon cinnamon
  • pinch salt
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons brown rice syrup
  • 1 teaspoon vanilla essence
  • 2 tablespoons light coconut milk

– Combine all of the dry ingredients

– Process until crumbly

– Add coconut milk, oil and vanilla then process until mixture is combined

– Roll heaped teaspoons of mixture into balls with your hands

– Roll balls in extra coconut

– Store in the fridge in an airtight container for up to 2 weeks.
